Hello friends! I have decided to hop on the train of people showing what they eat in a day. This is what a typical day looks like for me. I tend to eat the same meals every day or at least multiple times for a week, so lately I have not been deviating far from what I have listed below.
Before I start, I would like to disclaim that I am not a nutritionist, dietician, or any kind of health professional, so please do not look at this as any kind of recommendation of what you should be eating. If you are new to a vegan or vegetarian diet, I encourage you to talk to a health professional about supplements, specifically vitamin B12. Nonetheless, I hope you find these meals inspiring.
I truly love eating this way. I feel very satiated and all of these meals are delicious in my eyes. No foods are off-limits for me as long as they are vegan. I try my best to avoid foods with a lot of packaging or processed foods, but sometimes you have to compromise if you want to make meals you truly love, and that’s the best way to sustain a vegan diet. Without further ado, here is what I eat in a day:
Breakfast: I start my day off with a big glass of room temperate water, followed by another glass of hot lemon water shortly after. The particular breakfast I have been eating lately is the only thing I can stomach to eat in the morning. I’ve tried smoothies and overnight oats, but I really just don’t like them at all. What I eat now almost daily is the Silk brand almond yogurt alternative. I prefer the peach flavour to the strawberry. I top my yogurt with ground flax and chia seeds (great sources of omega 3’s) and whatever “healthy” cereal I found on sale at the grocery store. Although I’ve said before that I try to stray from processed and packaged foods, I know this meal is full of them. However, since it's one of the only things that I’ve been enjoying for breakfast lately, I keep with it. It's better than skipping breakfast altogether!
Morning snack: Lately I’ve been enjoying crispy chickpeas for a snack, which I roast and season myself. These have a Greek seasoning and some lemon juice and olive oil on them. They are so inexpensive but are healthy and filling.
Lunch: For lunch today I had a bowl of homemade soup. This one has lots of vegetables, barley, and homemade seitan. Seitan is made from vital wheat gluten. It has the same amount of protein as chicken, beef, or pork and, depending on how it is prepared, a similar taste and texture. You can see that the seitan I made has a shape and texture that resembles ground beef. I’m definitely no expert when it comes to making seitan, but I am happy with how this turned out.
Afternoon snack: My afternoon snack is always about 1/3 of a cucumber and half a red pepper with a serving of Sabra pine nut hummus! So delicious and simple.
If I do a workout, I will have a shake made from Vega One Protein and Greens powder and 2 cups of cashew milk. I will also drink one of these if I feel that I am wanting to consume more protein or other nutrients that day. It’s low in calories so I wouldn’t recommend it for a complete meal, but it is a good supplement if you don’t mind the taste.
Dinner: I have been eating this almost every day because it is so delicious! The base is about 1 cup of cooked rice noodles. I roast ½ a sweet potato, 1/3 of a block of firm tofu, and a green vegetable such as kale or broccoli on parchment paper, so I don’t have to use oil. Once these are all cooked, I pile them all on top of the rice noodles. (Pile is not an understatement. This is a lot of food and I have a hard time fitting it all on the plate.) I sprinkle it with some pumpkin seeds, a couple of tablespoons of sesame salad dressing, and kimchi. Kimchi is not normally vegan but the brands I use, Wildbrine or Back to YouRoots, are. Just be sure to read the labels or you can make your own!
Honestly, after that huge dinner, I am usually full for the rest of the night. I do treat myself to a few squares of dark chocolate pretty much every day. I always finish it off with a mug of herbal tea, and maybe a gin and tonic if I feel like it (most likely whilst reading an e-book in the bathtub, as shown.)
